    26 kettle set up

    Beef Dino ribs set up

    weber charcoal, will plan to run 250-275 for 7-9 hours I also use the magnetic part of the Thermoworks to attach to a big spatula to hang.

        She is a beast. I gave mine to my parents and they are in Southwest Louisiana but I was able to use it to cook a prime rib for Christmas.

        On my 26, this set up will easily run in the 7-9 hours range.

      5 hours in, half that charcoal still exists.

      I hope it looks as good on the inside as it is starting to on the outside. jamming to Warren Haynes. Having a coffee stout

        Snazzy use of the spatula. Also, creative use of the probe-grill attachments to hold the bricks upright! That's cool!

          Not shown in photos, is one more grate clip on he middle brick, opposite side. Yeah, that spatula is super heavy duty, workhorse in many of my cooks, I can use it from a distance to lift grates up., sides as a handy tool to attach the meter for sure

        Pulled at 8 hours, fire is still super strong and going. Guessing this set up will run 10hours. can’t wait to cut it open.

                Likely 6. I tend to want to build a fire that may underperform, it seems easier to increase temp, then to turn down temp. If I think I need a bit more to get up to temp, say 6 for the coal pile, and maybe 4 more that I will put on the cool side, those will help increase the temp at start, but will burn out by the time your others are starting to work across the pile to maintain the fire at preferred temp. So you will truly maintain a cold side as well.
