I picked up a Char-Broil Big Easy for $50 at an estate sale. As the review says, the "LOW" temp is too high at about 325F. Can anyone suggest a way to cool it down? Block some of the burner holes? Pan of water? Opening the top made very little difference. How annoying. Grilling I always want more heat, and how smoking I cannot get less heat. Life.
Hate that say it but you can't make a submarine an airplane. Big Easy is a great little cooker but it's not a low cooker IMO. That said you can do great Q pretty hot and fast. Do a butt in the basket at 325 and I think you'll be impressed.
