Recently moved back north, in the foothills of the coast range. Sitting in the middle of a forest, i see lots of vine maple and alder on the property. I can remember my grandpa telling me the vine maple was his smoke of choice for steelhead. I even have his recipe. Question is,,, wet or seasoned? Bark on or off?

Seasoned for definitely sure. I think purists would say to take the bark off, but I don't take the bark off the wood I use for smoking.

Current line-up of cookers: Oklahoma Joe's Bronco Pro, Masterbuilt Gravity Series 1050, Blackstone ProSeries 4 Burner 36" griddle, Weber Performer Deluxe and Weber Smokey Joe.
Definitely seasoned. The bark will easily come off properly seasoned maple logs, in my experience. But being a smaller tree, I think the thinner bark (assuming it will tend to stay on) shouldn't be a problem.
