      Previous cook was short ribs. Must have had some sticking out over the reservoir. Didn't occur to me to look for grease there since I've never had it in there before (that I'm aware of). I guess it's a new step to add to cleanup.

      The only time Iโ€™ve gotten grease in there was when I overloaded the kettle with pork belly burnt ends. That really made a mess of the kettle. Ever since Iโ€™ve used my PBC for pork belly burnt ends.

            I need to ask the store, because it comes in a white bag with zero text or labeling. I guess heโ€™s my local charcoal pusher, always getting me that good stuff in a large white bag ;-)

              Silly question. Do you use the vortex on the bottom grate because you start it with the gas starter? I never thought to put it down there. Do you have to keep the chicken away from the center? Wondering since itโ€™s so high up if the heat fans out, so to speak.

              Andrrr That was an older picture. I was just figuring out the best way to set it up at that time. Trying different things. My usual set up now is the fire grate in the upper position. I just thought the picture looked cool.

              It does look cool. That happened to me on Saturday making wings. I put the wood on before putting the wings in. Instant inferno!
