I made batch number two this week and I made the wood chunks bigger so I took longer to cook. Actually I had to cook it twice to get it done. The first batch I thought I may have cooked it too long. There is a learning curve on how much wood you feed the fire with. After an hour or so the off gases should be burning and after that you can stop feeding the fire. Here is the finished results, I used white ash fire wood.
