      So, Dave Matthews lives in Seattle, very normal sort of guy (have only seen him in hardware store). Our daughters used to see him perform every summer at a venue on the Columbia River, near the hamlet of George, WA (on the way to ComfortablyNumb 's spread.) But, enough of that, now back to those mushrooms, flank steak, and salad! That's music to my tongue.

      Today’s Christmas dinner as these SRF plate ribs were gifted. Finally.

      These were Outstanding. So, so rich. Wow. I was gonna add eggs but I thought that was seriously just gluttony. I couldn’t finish this end rib, smaller portion. The middle was gushy-er and giant. No way. Too rich.

        Jim White Kimchi. I was gonna make eggs but after the first bite I knew I needed something to "Cut" the Richness. So, it was kimchi, olives or dill pickles.

      Another chicken stir fry on the cast iron wok I got for Christmas, turned out real good!

      I put together some veggie and chicken stuffed poblano peppers after work tonight. Would have been even better with smoked chicken or veggies.

        I give you cast-iron seared pork tenderloin with gringo mole sauce. (Mole was shallots, garlic, cocoa powder, adobo chillies, cumin, cinnamon, cloves, Mexican oregano, tomato paste, and some apricot preserves, all reduced down and strained.)

        Since I was using Hank's KC Royale as the rub, I decided to refer to Hank's BBQ site for some pointers. https://hankstruebbq.com/

        Thai Basil Chicken Gai Pad Krapow. I had to use regular basil but it was a tasty stir fry. Served over Jasmin Rice and sauteed spinach.

          Yes! Carnitas! One of my favorites! There is a restaurant in El Paso, Texas I go to (well....pre-COVID when I was traveling for work). I go to this spot every time I’m in town for their carnitas tacos! Love it! And i get the guacamole as well!

        Flatbread last night. Leek onion garlic jam, chicken, peppers, and smoked mozzarella with a balsamic drizzle. Tasted good!

          barelfly I sent you a PM with info about the recipe. I use fresh cauliflower, roasted. I've tried it with frozen and it's disappointing. Never tried the bits either as I've found them lacking in flavor and they're hard to roast without burning.

        General Tso's Chicken. I followed the Woks of Life recipe. Their Chinese American take-out recipes are spot on, at least in my experience. This was delicious. Not too sweet, which a lot of recipes tend to be. Over jasmine rice.

          Looks great. Agree on Woks of Life, one of my go to’s. My new wok was delivered today and I’ll hopefully get to season it this weekend and looking forward to breaking it in

          Richard Chrz I like it but it's probably going to lead to more expensive knife purchases. I'm definitely reaching for it most often. I am worried about when it comes time to sharpen it though. I have a cheap sharpener that works great with all my stamped knives. But if you don't hold the blade perfectly vertical it will mar the blade.

          gabulldog you're right there can be a lot of ingredients. That matar paneer isn't too bad though. I've made that recipe several times because it's so good. It's time for me to move on to another recipe from the book I'm using. That kale dish was my first go at an Indian style dish I came up with myself. Of course it was super simple just 4 ingredients but it was good and I'll be doing it as a side again for sure.

        I cannot tell a lie () ... tonight's the night I just had to get my gyoza (in all its totally-made-from-scratch glory) on:

          gabulldog - Thanks, but you're looking at minimal skill here (more like a bit of beginner's luck). The sauce is 4 parts soy+4 parts rice vinegar+1.5 parts sugar to balance out the acidity. It's simple but quite good.
