I went with Clint Cantwell's recipe for spatchcocked bird, and it was absolutely outstanding. It's not as pretty as some others, but it was the best bird on the grill so far. We'll definitely do this one again. Find it here...

I couldn't get the temp as hot as I wanted, but it's prob just as well. The Weber ran 325ish for the full 2.5 hrs it took to get the breast of the 13lb bird to 160F. I used B&B lump with a small handull of cherry chips at the start. Great flavor with just a very hint of smoke. My wife was satisfied with the lack of heavy smoke like previous years.

Well it was just the two of us this year so we decided to skip the whole turkey and sides spread. However, to keep at least something turkey related in our dinner. We had a turkey pot pie.
NOW un-scrunch you nose. My wife found a hand made pie in a little specialty market near our house. And I gotta tell you, it was fantastic. I forgot to take pictures though. I know. Sorry. But it turned out to be a great Thanksgiving dinner for two with some nice leftovers. Who would have dreamed it?

Party of 2. Broke down the bird. Tanked the leg quarter and roasted the boneless/skin-on breast. Plated shown with the breast. Mashed red skin potatoes, gravy., dressing (or harvest bread pudding LOL), Brussels with my homemade bacon, cranberries from Martha Stewart. Since the bird was broken down, I made stock as well.

Went to Mom’s for Thanksgiving and luckily we were both fine doing untraditional. No sense in an all day cooking and cleaning affair for just 2 people. Did a Mississippi Pot Roast in the slow cooker. As usual, it came out great. This one is just too easy to make, and not mess up. Bonus joke included, no extra charge.

Did the turkey from Meathead’s book. Fantastic. Didn’t eat that much either because I filled up on my sides. Burnt ends and 2 bricks of cream cheese. These were done on the pellet smoker and the turkey was done on my WSM. It was chillier today and the WSM struggled to stay above 300 range. But alls well that ends well. Good bird today for flyingpiglet and he sisters. 14.5 lbs, dry brined 3 days, then S&G rub over a short stock. Great color, and overall a darn fine bird.
