    Retrofit 108 Lang Stick Smoker?

    I have recently acquired a 108" Lang stick smoker that I intend to use for commercial use. My question is.. would it be a good idea to retrofit it with a propane burner in order to keep more consistent temperature? (and what is the best way to do it?) I am hoping to use less wood and recover me temp quickly after mopping without adding more wood and risking temps that are too hot. Any advice would be greatly appreciated

      Your temp will recover fine, you're just opening the smoke chamber. I installed a burner in a small offset and it worked great. Not sure how many BTU's (Big heaT Units- Tim Allen def.) you would need for something that large. I know that a hot gas flame burning wood makes for outstanding smoked products. I would love an Ole Hickory or similar.
