    Fancy Food Show in Vegas

    Ok, as threatened, here is my my trip. The Fancy Food Show is just what you would expect. Lots of fancy foods. Chocolates, crackers, charcuterie, cheeses, international foods, sauces, spreads, etc. It was held at the new West Pavillion which is really nice! All shiny and new.

    the speel: Carlton Farms is located outside of Portland. They have two farms, one in Montana and one in Canada. Their pigs are fed a diet primarily barley, which makes the letting point of the fat higher, so the meat is juicier. We didn’t cook off a chop or tenderloin, so I can’t say for certain, but the product looks great!

    We sampled bacon (21-day dry rubbed applewood smoked). It’s tasty. It is not heavily smoked like Benton’s or Nueske’s. But way better than standard grocery offerings.

    the bacon is also used in this sausage that has smoked Gouda and Deschutes Black Butte Porter. Very tasty sausage. The texture of hillshire farms, but tasty, nonetheless.

    I got to walk the show and saw these guys.

    they won Memphis in May last year and the sales guy let me try on the ring!

    they also are doing their own cows and pigs (if I understand correctly). I tasted the ribeye. It was ok, not spectacular.

    Kosmos was there, too. This sauce was really good!

    it was a fun show, but I’m glad to be home.

    Funny story, there were three conventions going on. Fancy food show, the concrete show (attendees all wearing tool belts, trucker hats and flannels, right?), and AVN AEE. This chatty kid on the plane asked me what I was doing in Vegas and I said I was working at a trade show. He asked me which one. Note that I am wearing my cheffy pants still and a branded hat. I looked him square in the eye and told him to guess. He guessed the concrete show. I asked him if it looked like I poured concrete for a living. Then he said the food show. I told him he was correct and asked him why. He said it was because I didn’t look like an attendee for the AVN AEE show. Winner, winner, chicken dinner, Sparky!! 😝😝😝😝😝😝😝😝

          Amen! One of my all time favorite beers. Deschutes does not make a bad brew. Their Mirror Pond is another big fave.

          World of Concrete is the pavement show, it's an absolute blast... well at least for folks like me who have lungs full of silica A ton of drunk dudes who dress like they're broke but are secret millionaires... and a bunch of dudes in suits without beers who are broke...

          Had to search out the 3rd convention. Apparently not concerned with Avascular Necrosis. But the AVN's dress code is hilarious. I'll bet the food show had no dress code at all.
          I think we think that grilling/smoking is a form of adult entertainment.

            Ha! The sales guy (red shirt) have known each over 10 years. Actually, the first show I did with him was when he was with Nueske’s. They had a chef lined up and they backed out at the last minute. I had the time, so here I am.

          Hard to find dry rubbed cured and smoked bacon. Why I make my own. Good looking stuff. I bet that texture is the result of commercial binders, I use powdered milk or powdered buttermilk as a binder myself. Still good looking!

            Awesome! Kudos to them. I bet they go the 1/2 ultra fine grind, 1/2 courser grind. I have never tried it, but if they are getting a bind like that I may have to!

          Trade shows, and Vegas shows in particular, are like Disneyland is for kids. Years ago I was a regular for years running at the SEMA shows, as well as a couple years at CES...................these are the two largest trade show gatherings of all time on an annual basis. The comments above about unassumingly dressed heavy hitters fits in just about any gathering of industry professionals. There are the wannabes, and then the "make it happeners" no matter what endeavor it is.

            I know CES very well. I've attended at least 26 years straight with my employer, luckily since 2020 i have not had to attend. My feet and back are extremely grateful.

            My experience with CES is that the majority of attendees are dressed buisiness smart or at least buisiness casual.

            I am so far removed. I have no idea of the difference between business smart and business casual.
            I have noticed that local public defenders and prosecutors often do not wear jackets in court.

            A colleague of mine once got back late from duck hunting. On the 1:30 docket he still had on his waders, covered by his sport jacket.
