    First Cook On Primo Oval Junior

    So those of you who have seen my recent posts have noted that i found a deal on a Primo Oval Junior on Craigslist. After several test runs I did my first cook on it last night. First let me say that once you get the temps dialed in, this thing is ROCK STEADY. I had no more than 10 degrees temp variations in over 3 hours on my test run.
    For my first cook I chose to do a chuckie that I had previously done in the Sous vide for 24 hours at 131 degrees F. I piled up the lump in half the firebox and lit one small fire with my torch. Once it got to 250 grate temp, I put the chuckie on The indirect side until it hit 115 internal. I then brushed it with a bit of oil, and moved it to the hot zone. I took it back to 135, and got a nice sear on it.

    To to be honest, l am not sure how I felt about it. It was good to be sure, but not as good as I had hoped. I honestly liked the 1/2” thick sirloin that I cooked next to it as well as I liked the chuck. The chuck had been vacuum packed in the freezer. I don’t remember the grade of it. Too old? Too long in Sous vide? Not long enough? Everyone else thought it was really good. I guess maybe I expected too much?

    As for the Primo Junior, I love it! I will be using it a lot. It heats up quickly, and holds steady temps. I still can’t believe that I scored it for only $100!

    Well it looks great to me! Komados don't interest too much. But, if I found a deal like yours, I'd buy it for sure.

      Try putting a foil baking sheet between the coals and the indirect side to remove line-of-sight radiated heat.
