Got the urge for some Tri-Tip. So Sunday I took a trip to my local butcher and picked up a 2-1/2lb prime beauty. Also had some nice 16ct shrimp in the freezer looking for something to do. π
Dry brined for 4hrs, vac sealed with some thyme and garlic and into the bath for 4hrs.
Marinated the shrimp in a soy,ginger, garlic, scallion concoction.
Once the tri-tip was done bathing I dried it off and seasoned with pepper,garlic powder and a little paprika.
Fired up the BGE used the 2 half moon racks from the eggspander and let her rip.
