    After going thru withdrawal pains for 8 months. Dang, is the meat supposed to be inside the smoker? More out of practice than I thought...

        Inside or out? It's your choice, but it will cook a bit faster if you put it inside, and faster still in there's a fire inside too.

              Get those "twins" on and good luck on the cook. Never seen a water cooled Kamado with a temp controller in use.

                pulled them off after 15 hours at 203. They're resting in the cooler now, so no pics, but they are looking perfect!
