Keeping a 225 temp on the BGE.

    BradNorthGA It took me several years to realize that I needed to start the BGE longer in advance than a gas grill, or a charcoal kettle.

    I did an overnight brisket Friday into Saturday. I went out to light my BGE at 4PM for a 6PM cook start. It was frozen shut (10* outside)! 45 minutes with a heat gun...

    Then I did exactly like always. It took a long time to heat soak the ceramic, the brisket went on some time around 6:30.

    Outside temps will affect final vent settings somewhat. Not a lot, but some. You shouldn't notice a difference in GA. Here in PA, it might be 100*, or it might be -2*.

      I'm heating mine up to do some ribs today and following your method as described in your post. It is taking a bit longer to get ready (almost there, just over 200 atm) but I have a feeling it's gonna be a lot more consistent at holding temp now
