So I have finally convinced myself to go with a WSM, with some of the upgrades. Seems to be the best bang for the buck.
Can I get comments on which size to get?
I would like to do a full brisket, will the 18 typically handle one? Considering the typical variety of sizes briskets are available to purchase.
I do not "plan" on doing a lot of pieces at once. Either brisket, or beef ribs, or turkey one at a time.. I think a 18 will do it, but wanted to get input from you guys that have done it.
