    No-Wrap-No-Hang Pork Butt

    I decided to forgo the "crutch" and hang this time. I wanted more bark, and the butt was looking a bit unwieldy, so this is the direction I went with. Still have 20 degrees to go, but I'm liking the look of this so far! Smells amazing!

          Good idea with leaving the grate installed, wouldn't want to lose that beauty to the fire gods!

          Wow, that's looking mighty tasty, vibemore . How did it turn out?

          I always move my PBs to the grate when they hit about 160° internal, just to be safe as the meat starts to really soften up. I never wrap or rest PBs. Too much of a PB bark hound to want to chance it softening in foil or butcher paper.
