    Fan with Controller Lighting Advice?

    I'm going to try a first run with my Pit Viper and the FB2 Drive today, sans food, and was wondering if those of you who already use a fan and a controller use a different lighting technique, and if so, what is it? My goal today is to see how well I can hit and maintain around 225 so I'm thinking that fzxdoc 's method is out as it will overshoot where I want to be. I was thinking perhaps either a lighter cube in the centre or perhaps a small Weber chimney full?

    I've only used my Pit Viper/FB/PBC setup for poultry cooking so far, and find that a 15/10 works pretty well.

      What are you cooking on? For my kettle/SNS I do low and slow the same way. Start with 12 or so lit charcoal then fill the rest with unlit. In my WSMs I use the minion method. Guess what I’m saying is the lighting technique doesn’t change, just the way you setup the cooker.

        +1...I don’t change anything either. I bring my temps up to within 10 degrees of where I want ToruÅ„ then close things down and let the fan take over.

        Note what group we're in. :-) That's actually not the case here. I normally follow the 15-10-10 method and that is going to get me far above 225 before the fan even gets turned on, hence the question.

      I would think using less fuel in the chimney to start would help keep temps lower.

      Ive been pondering this myself. Interested to see what you come up with.

        Agree. I have found it always easier to raise temp than to lower it.
