Okay gurus... I'm doing tri-tip on the PBC today. My thoughts are to use one full size Weber chimney of coals since this will be a short cook (probably poured all on one side of the charcoal basket. Do you think that will be sufficient? Any other tips (no pun intended)?
This will be my first tri-tip to follow up on my first brisket from Saturday. Tri-tip is not as common here in NC but I have done a lot of London Broil. Definitely against the grain... I was taught it doesn't matter how good it tastes if you can't chew it
