    First cook with my new PBC!

    Last Week I was walking in my local Canadian Tire. They started to put out this years BBQ Display. The happened to put a PBC on clearance for $209 Canadian. So I just couldn't pass that up. Had to re arrange my growing outdoor smokers and cookers to find this this guy a home.

    Finally got a chance to break it in on a trial run yesterday. it was just below freezing up here I used my Maverick ET-735 to monitor the temps.Started it up using fzxdoc 's 15-10-10 (should have let it go 20 as I'm using the little Weber chimney) and it worked great I hit around 370-380 before I put in the bars and the lids for another 10 min.
    Then put in a some Side ribs for this trail run rubbed with a variation of the Meathead's Memphis Dust.

    The pit seamed to settle in 295 one side 270 other side for the first hour and a half. Then temp was dropping so cracked the lids to bring it back after that is settle in 265~

    I've been using my BWS Chubby 3400 to do majority of my smoking. I think these came out better. Will have to try a cook off in the near future.
