For ribs I add several chunks that if you pieced it all together would be 4 inch diameter and 3 inch deep. I use about twice that for pulled pork and brisket. I like my meat pretty smoky though.

I always Kingsford charcoal. I'm not saying it has to be done that way, just saying that's what I use. When I want to add wood flavor I'll throw in 4 to 6 small dry chunks of wood. That amount of wood should be good for one rack or eight.

How big and how many
What is the size and how many pieces of wood do you usually use in your PBC. Say your cooking two baby backs and your also using charcoal.Tags: None
