                    Looks really good. Curious to see your results at 195 F. I usually push it too 203 F. Maybe I don't need too.....

                      Most that go the entire cook unwrapped are plenty good by 195, especially if you rest for a bit.

                      Did the PBC run all ten hours on the original load? I havent tried that long of a cook on mine.

                          cosmo Nice bark. Is that a result of the rub you used? I'm assuming you went the whole cook unwrapped, did the PBC go all 10hrs for you on the same load of charcoal? I normally wrap but have not done it the last few PBs I did. One time the PBC pooped out before the butt was done. That meteorite bark has eluded me.
