To hang or not to hang

    Now, a couple of months in, I've used the grate once, and hang nearly everything else. If it can hang, I will hang it. I didn't buy a Pretty Drum Smoker to use the grate... ;-) But some things are harder to hang... though I do see the skewer hangers in my near future.

    Have been doing a lot of chicken and ribs... spatch and debone a bird, and it's maybe better than even the Grilla bird. Have to do a side by side. Also, if you do the full ChefSteps spatchcock, carving is dead easy.

    Finally ran through my first box of firestarters... Have a box of 70 on the way...

      I like the skewer hangers for the PBC. I use them for chuckies, turkey breast, and all the rib trimmings

      My skewer hangers are coming... heheh... Want to do a full churascaria experience in the barrel.

    I prefer the grate unless i need to cook a bunch. Rarely do more than a couple of slabs at time for the family.

      I recently hung a couple racks of St. Louis ribs in my WSM 22. I did a three hour hang, 2 hour butcher paper wrap and then 1 hour uncovered to finish. Best ribs I ever made. Not sure if the hanging was what made them so good or just a good smoke.
