Been wondering if the Apollo could also do the job as a drum smoker. Had a nice little grain-fed chicken in the fridge so I decided... what the heck!
Quick rub of my modified version of BBBR and some Memphis dust.
Took out the water pan completely and got the Apollo going at a nice and steady «chicken friendly » 300 degrees without effort. Got the chicken (spatchcock) on the top grate. A few small chunks of hickory and apple with the briquettes.
Gotta admit it’s a pleasure to get that taste of charcoaled chicken, with the fat dripping on the coals.
I’ll likely be exploring this technique more and more in the next weeks.
