    Barrel Aging

    Filled the barrel with a couple bottles of BT. I figure I'll start sampling after a couple of weeks.

      It’s a fun thing to do. I haven’t done it with straight liquor but did it a few times with cocktails like manhattans and negronis. I usually keep a small amount "unaged" to taste against and its fun to see how much flavor and nuance the barrel adds after 1-2 months

    It has already been aged 8 years hasn't it? I would wait 2-3 months.

      All I can offer is resist the urge to sample too much/too often, because when it's perfect and you decide to bottle, you have only half what you thought.
