We drink a lot of iced tea, and I was never happy with using tea bags, but that was all I thought was available. However, I found some loose leaf Assam black tea in Boston when visiting our son, (who now lives in Austin).
Using my Aeropress, it made great tea, and I found the same type of tea locally, and then I found Assam Golden Tips on Amazon. Everyone who tries it really likes it. So I thought I would post how I make it here just in case someone wants a break from their favorite adult beverage.
I use 2 grams of tea leaves per cup, (8 oz), of water. I have a half gal Mason jar reserved for tea, so I make 8 servings each time.
Place the leaves in a heatproof container, boil 8 oz of water and pour over the leaves. You can either place the leaves in a strainer or strain the tea after it has steeped for 5 min. (As mentioned above, I use my Aeropress and invert it to steep the tea.) I squeeze as much liquid out of the leaves as I can - the Aeropress makes this easy.
If you are making 8 oz, add ice and you are done - add sweetener if you like. If you are making more than 8 oz, pour the strained liquid into your container with the rest of the water. Refrigerate any leftover tea.
