    Kombucha!

    Technically it's alcoholic, but not enough to give anyone so much as a buzz.

    In addition to my recent forays into smoking and searing I've been playing with all sorts of fermentation (pickles, kimchi, sauerkraut, yogurt, kefir) I've found I really, really like kombucha and brew it (since the brands made with 100% "pure love" are obscenely expensive).

    I always wrote it off as a sort of hipster drink, but a good friend had me try some and I was hooked. Fizzy + tart + sweet + unverified claims of immortality seem like the perfect combination. Also, growing a SCOBY looks pretty disgusting/awesome in my pantry.

    Anyway, anyone else here like or brew the stuff?

    I haven't yet…. My oldest daughter wants to brew some, so I may start in order to fine tune the process for her/with her, depending on how much time my granddaughter lets her spend on it.

      I consumed some of the store bought stuff but never made my own. Sauerkraut and kimchi is the extent of my fermentation experience.

              I just started brewing it as well. I've been flavoring it with raspberries. At first i was frustrated because I couldn't get any carbonation. But about the fourth brew, basically been keeping them to a week, bam! I opened a bottle and it just fizzed everywhere. This is the first batch with no outside vinegar. I went from no carbonation, to so much it's hard to open the bottles. The possibilities for the secondary flavoring are endless. That's what drew me in.

                  Nice! I gotta get my production up to the 4 gallon range. My family guzzles this stuff down like crazy.

                  Anyone got tips for improving carbonation?
