Memories from a trip to Utah (Provo) about 20 years ago: 1) Applebee's (yes, I used to eat there) was out of white wine. 2) The liquor store wasn't allowed to sell cork screws. 3) Billboards everywhere advertising "missionary tough" clothing.

Or the cornbread was THAT good and brisket was very good and sausage was close behind.

Cornbread then brisket were the best itemsThey had great bark development on the brisket, but not much on the ribs.

Good write-up! Nothing worse than flavorless ribs.
There's a well known "bbq" diner near me that is popular because of the super-popular next door donut shop, and their pulled pork tastes like it was cooked in an oven with no seasoning. It's terrible by backyard bbq standards, but you're supposed to dump the sauce on it THEN call it bbq. Your description of the ribs reminded me of that.

Nice writeup. It's weird, though. The ribs were terrible (I trust your opinion on that), but they are actually the best looking meat I see there.
