When I was in San Marcos for the BBQ meat up, the central style Texas BBQ was excellent. In California, we’re not really known for BBQ and getting some Texas BBQ (like Heritage, Moo’s or Bludso’s) is good to get. But when I’m in Georgia, Alabama, Memphis, So. or No. Carolina, etc., I don’t want Texas BBQ. I want the BBQ of the region.
I mean the BBQ, or even Chili, universe does not revolve around Texas
I don’t have much experience eating BBQ outside of Texas, but I’ve said it before, some of the best BBQ I’ve had was at the NC MeatUp at East of Texas.
