        Look out Franklin BBQ, there's a new "World's best BBQ" contender! Congrats Paul, I hope to visit someday and maybe get a tour of your beautiful place.

        Oh, and "thousand of dollars I had extra just laying around"....hmmm, please let me in on your secret. I can't even find "ones" of extra dollars lying around.

                    This will be a Multi-Part Post...Part 1 of ___.

                    Well...It happened! A week ago Friday was Opening Day! I only put in 110 or so hours of work that week, pushing to open. And we did! I'm super tired but I really wanted to share with you guys!

                    In case you were wondering, designing a new restaurant and brand is not a simple task. At every corner there are many decisions. I wanted the place to look as cool as the food tastes good. For tables, I wanted to something with raw wood, cool and fun. And not your standard stuff you can buy from the restaurant supply. So we made our own, with raw 4x4 legs, cool black iron pipe crosses in the center, and a smooth stainless top. Here's the in progress...

                    And the finished. What do you think. It's like smoking meat: Wood and metal stacked and used in harmony!
                    Here's the mantle, merch section and plenty of love for America!

                    Oh, and the Trim Boards - They are all Sinker Cypress and Pine, cut in the 1880's and floated down the Sabine River. Our Barbecue is Texas-Style Barbecue with Louisiana Flair. Well, the Sabine is the River that separates Texas and Louisiana, so it's just perfect! The trim is our key interior design element. The is Pecky Cypress over the Mantle and on the Beam over the serving counter just screams Louisiana, just like I wanted!!!

                    I saw this solid slab, 8' long, about 40" wide Pecan slab table and fell in love. It's the signature table, right at the entrance. And of course, we put the Flame of Freedom right there for the fun and memories! Pallet board American Flag art piece will go on the wall behind it. Oh, and the Red Chairs put the RibShackRed into the interior!

                    I think I showed you guys our 9 fool long custom cutting board top, but here it is all surrounded by the trim and the cool Sneeze Guards. I LOVE IT!

                    This is the crew that milled all our Sinker logs, made our custom cutting boards, and assembled the tables for me. WilliamsWood.net, So great! He's become a good friend and a big advocate and fan our our barbecue. Go Scott & Fam!!!!!

                    Somehow I think that now that you're officially open, you still won't be able to catch up on your sleep. But keep trying!

                    It looks great and I bet the food is out of this world.
