It's been a few years since I've been over to Louisiana, but if I am ever heading anywhere near Lake Charles, I know where I am stopping for lunch and/or dinner!

Started Low-N-Slow BBQ in 2012. Obviously, it's taken hold (in chronological order:
1.) A pair of Weber Smokey Mountain 22.5's
2.) #LilTex, a 22" Expensive Offset Smoker (looks like a Yoder Witicha)
3.) #WhoDat1, a HUGE Gravity Fed Insulated Cabinet Smoker (cooking chamber 3'x2'x6')
4.) A Full Size Commercial Dryer/converted to Vertical Smoker.
5.) Jambo Backyard stickburner (my FAVORITE Pit so far)
6.) GrillMeister, a huge 24"x48" Adjustable, Charcoal Grill from Pitmaker.com
7.) 22" Weber Kettle with Slow-N-Sear
8.) Vault insulated reverse-flow cabinet smoker from Pitmaker
9.) BarbecueFiretruck...under development
10.) 26 foot BBQ Vending Trailer equipped with HUGE Myron Mixon 72xc smoker is HERE, Oct 2016!
11.) Opened www.PaulsRibShackBarbecue.com Food Trailer officially in March 2017
12.) Austin Smoke Works 500 Gallon Propane Tank Offset Smoker, named "Lucille" as travel pit for PaulsRibShack, Oct 2018.
12.) Opening Brick & Mortar location at 4800 Nelson Rd, Spring 2019. Had a pair of 1,000 Gallon Austin Smoke Works pits, both in RibShackRed for our new place!
Fabulous Backlit Thermapens, several Maverick Remote Thermometers (don't use any remotes anymore), Thermoworks Smoke, Other Thermoworks toys, Vacuum sealer, lots and lots of equipment...
I'm loving using BBQ to make friends and build connections.
I have #theRibList where I keep a list of new and old friends and whenever I'm cooking, I make 1 to 20 extra and share the joy.
Well, if you keep your phone on, sometimes you get a call from the local TV station asking if you can be up at the station in a couple hours to talk local festivals and your barbecue joint! Luckily, we had some Beef Short Ribs in and Turkey vacuum sealed in the fridge we could warm up and then race over to the set for the noon hour!
Enjoy

Guess what? We are under construction!!! It's fun, well, sort of, and tons of work. Here's a little update:
We hung some test lights in November. So pretty! I learned the straight up Edison lights will last a while, but the filimants are def. for interior, not exterior. Experimenting with other lights in the same style strands last few months, as well as with professional light guy.
Built some more wood racks one afternoon when a guy was showing up with 2 chords and I didn't have a place for them.
#StickburnerForever
New fence in back is up...and I have this little bit of yard-art in front of it, testing...
Here are the foundations for the back of the kitchen expansion. Found a tank in the ground, lol. All fixed up now!
Isn't drawing in wet cement a must? Also, did you know that Jesus is recorded with some super cool live-fire cooking? #LookItUp
Well, I am the Bishop of BBQ after All!
Here's the back addition platform after the slab is up. Under the lights!!!
The Serving counter!!!!
This house was added onto several times, and we found a sagging ceiling where they move the front of the house out but did not put a beam. A single 2x6 header supported the weight. So when we took out the cased opening walls and put up beams in each of them, we have the support to cut out and put a beam in the ceiling (no pic).
And a view of our place from the South. Trees Trees and Red things!

Awesome man! I was in LC for a few days with my mother in the hospital. Your place was closed on the days I was there. I also talked with a dude in the ER. He had a BBQ shirt on and I asked if he had been to your place. He said no. I told him you were on Nelson Rd. I have a strong suspicion he'll be coming in to graze at some point.
Like the cement work too! 👍ðŸ™
