    Chicago food and phish trip

    so im here in chitown visiting a friend. We are hitting up the three night phish run at allstate arena but also doing a bit of a culinary tour.

    flew in this morning and landed around 7 chicago time. After getting to my buddies house and indulging in an early morning glass of bourbon, we hit calumet fisheries. Picked up some fried shrimp, fried smelt, smoked shrimp and a big hunk of smoked salmon. Enjoyed it on the docks with a nice blanc de blanc champagne. Salmon not pictured because we didnt open it yet but will shoot it later.

      I grew up on the Southside of Chi, never thought much of Calumet City to be honest, but some of those fish joints all along the lake front have some killer seafood. I guarantee they didn't catch those shrimp in Lake Michigan !!!

      (Bourbon for breakfast? That's the spirit [pun intended] !!! )

        I can remember as a kid we used to ride our bikes up to the Sheridan Road bridge over Wilmette Harbor next to the Bahai Temple on the Northside where a guy had a little shack where he'd sell smoked whitefish fresh caught from the lake. In my mind's eye that somehow was the best fish I ever tasted. Ahhh Troutman in his youth !!!

          Best brisket I've ever had. The night we were there the flat was excellent, so maybe a bad night, yes.

          Ok. So the brisket at smoque is to die for as long as you get the point. The flat was dryyyy. Maybe just an off day. The real star of the night was the salmon from calumet. All i can say is wow

            The guy at the store said they cook it for about five hours then smoke for an hour. Ill be damed if i can figure that one out

            My son is a phishhead. He been one since high school About 16. He's 40. Just went to 2 shows in Albany. He goes every new year to MSG. Pretty sure he's going again. grantgallagher you might have walked by him or sat next to him if u r a long time fan. He's been all over the country. He's been to 119 and counting.

              I havent been to that many but probably 50+. Im at msg every year but these days dont travel much for shows. Used to go all up and down the east coast.

              Pics from SKY. This place just missed out on a michelin star. The food was really great. Three course prix fix. This is just a few dishes from the table.
