    Michelin's #1 BBQ in California. I'm not sure, is Michelin even allowed in Texas?

    I just recently learned Michelin is only in select places. Texas isn’t one of those areas. From what I’ve read, New York City, Chicago, San Francisco, and Los Angeles are the only us cities included. ​

      There are 159 restaurants in Florida that are listed in the Michelin Guide.

    Just a little factoid: Danny Castillo, founder along with his wife, who used to be a corporate cook for Whole Foods, has family in Fort Worth and Austin where he studied and learned Texas BBQ. His goal, and they do a pretty dang good job of it, is to bring Texas BBQ to Cali. One of the only places that uses offset smokers around here to produce really good Q. Expensive though, and like many Texas places, they only serve until they run out, which happens pretty much every day.

    So, not really Cali BBQ competing against Texas BBQ, but more like cultural appropriation, to use an overused phrase.

      I'll definitely try this place next time I'm in San Diego. How long will it be before California shuts down grilling and smoking?

        Actually, all you will need is a permit and a $200K exhaust system with semi-annual inspection.

        bbqLuv Actually I think it would be a pollution control device. Something like a HEPA or particulate filtration system to control the PM output. Exhaust is the easy part.

        It can get pretty onerous - I know of one in Oakland that just got turned down to use the 1000 gallon pit they ordered. I BELIEVE the Oakland city council has passed ordinances preventing any and all smoke to be released outdoors or something? Some of this stuff is just fecking ridonkulous these days. Seriously.

      Just saw this. Heritage is pretty dang legit, IMHO. And Danny and his wife are friends of my boss and her husband. They come into our market every now and again.
