Cooked the usual crap but threw some beef cheeks into the mix. Damm they were good. Salt/pepper smoked till good color then wrapped and blasted them till 210f internal. Squeezed them in my hand to shred. Turned out really tacky from all the rendered sinew.. Going to make em again soon. The Frozen brisket turned out fine even after finishing the cook today wrapped in foil.
