TO be honest, I haven't done anything simple where the pellet flavor really stands out.

The ONLY pellets I've ever used that stood out as different were Bear Mountain's "Bold" blend. Otherwise good luck noticing anything but 'lightly smoked' with all of them. To me that's ok though since I have other cookers for "smoke" flavor.

I received 40 lbs the other day and my first cook was a whole chicken. It cooked at 220 degrees for a short while and then up to 350. I seasoned with Dizzy Pig "Tsunami Spin". The seasoning is rather strong, so the subtle smoke flavor was just noticeable and I would say very nice and mellow. The pellets are quality and burn very well. I recommend giving it a try.

I see Knotty wood now sells their almond pellets at Home Depot, with free shipping...
Also, they now have plum wood pellets...
You definitely should try a mix like the one of Knotty Wood Pellets and Honey. Honey translate well to cooking any type of meat. Shop now.
I have the almond pellets, and have been happy with them so far (for pellet and burn quality). Haven't really cooked with them enough yet to fully digest the flavors.

So I finally tried the plum pellets from Knotty Wood. They provided a nice fruitwood smoke, but I can't say that I picked up any distinct taste on the meat. (Frankly the only pellets that standout to me flavor-wise are overpowering Texas blends.) The neat thing was that the smoke ring was purplish. The pork butt only spent about 7 hours on the smoker. Otherwise, I think that the purple smoke ring would have been more pronounced. For a $1 a pound, I would definitely buy another bag.
