What the Troutmeister said. It takes a little finesse, but after a while it comes naturally. You just can't do what my wife does and turn a burner on full blast, wait for the pan to glow red and then start cooking. And when they get a little gunky I just use a little Barkeeper's Friend and some elbow grease and they clean up very nicely. I have their copper core line and they are amazing to cook with.

IMO I would say the short answer is yes. I have their 10-12" frying pans and they are excellent and really quite slippery. That and CI get about 90% of my attention. Certain things (like eggs) and stick sensitive stuff I may go with non-stick. There are a few things you learn to avoid sticking like watching your heating, etc.

Nothing for me in there. I do think Panhead John should take advantage of the sale on the irons, would certainly make his wash day experience a lot brighter !!

Thanks for sharing. IF I can ask, does it take time to get used to this kind of cookware if you are used to non stick? Thanks!

I wonder if their instant-read thermometer is worthwhile. $25 down from $40

This how I've built a nice collection of truly fantastic pots and pans. I would have never thought that quality cookware would make such a difference in the cooking experience.
