What the Troutmeister said. It takes a little finesse, but after a while it comes naturally. You just can't do what my wife does and turn a burner on full blast, wait for the pan to glow red and then start cooking. And when they get a little gunky I just use a little Barkeeper's Friend and some elbow grease and they clean up very nicely. I have their copper core line and they are amazing to cook with.
