    Hot and Fast with Fireboard?

    How do y'all setup the charcoal in 18" WSM for 350 - 375° hot and fast cook controlled by the Fireboard? Type of charcoal, number of lit vs unlit coals?? Thanks for any advice.

    I don't have a WSM, but I run mine on my Kamados. I use lump in mine, but Kingsford or Lump will work in yours. I would buy lump, try B&B Charcoal or FOGO.

    If you are using lump, I would light the fire directly in the center of the WSM. Or dump about a 1/2 a chimney, maybe a little less, of red hot coals to the center. Let the fan do the work, but you may have to crack your top damper more.

      Never tried to run my wsm that high, but I think it would work like Spinaker said. You may have to leave the top damper all the way open to get it to run that hot. I have had trouble getting my wsm to stay at 325, but I haven't tried it with a fan control (I have a party q).
