        I use my oven broiler when I want to sear/brown or melt cheese. Sometimes I will leave the food in a pan and cover it if I just want to melt cheese. I don't have any type of pizza oven.

          Get a full chimney going then into the vortex on the 22”. I’d pat it down with paper towel beforehand to ensure crispy skin.

            When you ask about "salamander" techniques are you asking how folks in the Pit approach searing?

              Not to sound like a "know it all", but a salamander is a restaurant term for the thing that puts the heat source from above,. To melt cheese, or brown something.

                Like this. To Redwng point, we use the broiler setting in our ovens…..

                    But even better, since they were thought to live in flames without being consumed, they appear in medieval love poetry as symbols unrequited love. Nothing says lustful longing like a salamander

                  if someone comes up with a good recipe I will be fed for life with all the salamanders I have around here! geckos, lizards, whatever the heck they are.
