    Slow-n-Sear Question

    I was lucky enough to get a Slow-n-Sear for a birthday/Father's day gift. I would like to do a short (20 minute or so) high temp indirect cook with fish tonight. My question is, do I still have to use a full chimney (1/2 unlit, 1/2 lit) of charcoal to get to 400 degrees for such a short time?

    Hi efincoop - I'm not an expert, I'm sure one will be by shortly. In my limited experience, no you don't have to put the 1/2 chimney of unlit coals on for a short cook. I usually find a recipe here or on ABC that is similar to what I want to cook for guidance. Here is one from Adrenalin Barbequie (makers of the SnS) for swordfish which says just put 1/2 a chimney of lit coals. https://abcbarbecue.com/swordfish/

        Hugh got it right. You do not need a full chimley to cook the fish yer talkin about. Bring the coals to hot & cook the fish fast cuz fish cooks fast.
