Almost your thoughts exactly. I think 🤔. But if that contraption is gonna work it’s gonna need a Vortex.
Especially if you’re gonna cook a chicken at the same time.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

It would definitely create a 'heat shadow' in a lot of places with a direct/indirect setup in a kettle, under-cooking some back side slabs since the heat travels mostly sideways & up. Might require a lot of regular rotating of the whole setup. Might work great on a kamado though if it fits.
