Turkey on charcoal grate with slow and sear

    Turkey on charcoal grate with slow and sear

    I was wondering, while using slow and sear would it work as efficient if you placed a large turkey, (instead of spatchcocking) on the charcoal grate which would give better clearance from the lid. Turkey would be next to the slow and sear instead of above it on the grilling grate. Any thoughts or ideas would be greatly appriciated.

          It would take a looooong time to cook since all that heat is going up over the turkey.

            You'd be better off not using the SnS. Temps are way cooler on the charcoal grate any way, but without the SnS you'd pick up some radiant heat. A smaller bird, say a 13 pounder will fit on the top grate. Do you have an identical sized WSM? You could borrow the lid from that as it is much higher than a kettle lid.
