I'm about 4 hours into my first cook using my new SnS. I followed the directions, lit a starter cube, a small amount of charcoal, then added a full chimney. The temp has has been nice and steady.
What I'm not clear on is refueling. Do I dump another chimney of charcoal on over the old coals? Would that cause them all to ignite and get too hot? Or do I push the last of the coals to one side and then dump the charcoal in so it burns like a fuse again?
We have two weber kettle grills (one LARGE and one small/average), the SnS and the Weber Smokey Mountain 18" smoker. We use both natural lump charcoal and KNB for smoking and measure our temps with a Maverick 733, thermopen and MK4. Favorite beer depends on what is cooking (alt answer is yes).
