Quick question for the Work Sharp Ken Onion Edition owners: Does the power button have a locking feature? I am assuming because it has variable speed the answer may be no. I only have the use of one hand and cannot depress/hold down a powert button and hold/guide the knife simultaneosly. Thanks in adance for your assistance.

Yes it has a locking button. The issue would be because it isn't very heavy, it can move while grinding. Would need to secure it somehow. It will lock at any speed setting. Once locked, there is a screw knob on the trigger that you can turn to adjust the speed. You might have to have it set at a higher speed to make sure the trigger locks, but then you can readjust for speed.
