    Electric knives

    Has anyone ever used an electric knife either for cutting brisket or bacon? I have one, and I've used it for roast, ham, and poultry, but I have shied away from these two things. Am I being too cautious?

    Once I bought a cheapo knife sharpener and use it, I've since retired the electric.

      Just take a whack at it. One cut will tell you if it works.

        Exactly.
        I’m not a fan of electric knives myself...but some people love ‘em.
        Only one way to know for sure..,

      My electric knife is now 40 years old. It's my first choice for carving brisket, pork loin and turkey.

        Brisket will work well with it. If you freeze the bacon it should also work well.

          I use my relatively ECO on brisket on a regular basis.
          I get some frowns from some "purists" but it works so well they're easy to ignore.
