Was scheduled to arrive Saturday. Instead it sat at a post office one hour from here and arrived on Monday. I had hoped to graph the cook from last night so instead I graphed the Cambro temp. The time is off so in real time it was 4:45pm to about 6:40pm. The internal meat temp is the black line and the orange line is the Cambro air temp. I need to get a velcro backing for it. Electrical tape did the trick for the moment.

What were you monitoring, a pork butt or a brisket? Although I love their products, wouldn't using a Fireboard or a Signals give you the same information? I do suppose this is a bit more accurate.
